Gyokuro on ice cubes

Another way to prepare tea is with tea leaves and ice cubes.
This method of tea preparation is most recommended for shade-grown teas such as gyokuro, kabusecha, or some sencha varieties. Cold brewing brings out the special umami flavor that characterizes these teas.
YOU WILL NEED (per serving):
- Cup or teapot
- 8 g of tea leaves
- ice cubesPREPARATION:
1. Place the dry leaves in a cup or teapot.
2. Place the ice cubes on top of the tea leaves.
3. Let the ice cubes melt at room temperature for 1 hour.
4. Drink straight from the glass, leaving the leaves in the glass, or strain the leaves through a sieve and pour into the glass.
Drizzle the remaining gyokuro leaves with soy or ponzu sauce (you can add sesame seeds) and eat - delicious!
